Meal Planning Monday
We've had a busy weekend - we're headed surprisingly quickly toward Harry's first birthday and party, and have had lot of wonderful help to get the house and garden ready. That said, I've managed to do lots of batch cooking - Harry has dairy-free broccoli pesto and houmous in the fridge and freezer. I also made an olive oil chocolate cake which is fab, and some vegan meringues. I've got no idea what's going on to the meal plan - I've just had to open the Aldi website to work out what we're going to eat!
Breakfasts - porridge or overnight oats for Harry and I. I found some mini bagels on special in Sainsburys that are dairy free, so to make a change from toast, he's having those with fruit spread. I'm having to ration his banana intake because I think they're making him constipated. He's not impressed as they're his favourite.
Lunches - Harry has houmous, I have some of my Spicy pepper and tomato soup to use up as I had some salady days last week
Suppers -
Monday: Pulled pork with baked sweet potatoes and veggies
Tuesday: Leftover pulled pork in wraps with salad
Wednesday: Freezer surprise
Thursday: Smoked trout pasta with green veggies (low syn - using Oatly creamy oat as a cream replacement it's 2 syns per portion)
Friday: Breakfast for supper
Saturday: Gammon steaks with homemade chips and veggies
Sunday: Roast chicken
That'll take us nicely into the following week with some leftover roast chicken.
