Meal Planning Monday: the heating's on

We caved last week - my summertime obsession about the baby overheating has switched (much like the weather) into an obsession about him being too cold. Which is hard when he wriggles his socks and hat off, and screams the house down if you try and shoehorn him into a cardi or jumper. Blankets and heating it is then.

Unsurprisingly there's another casserole in the oven as I type, and dumplings ready to be popped in before too much longer. This weather just seems to call for tender, slow cooked meat in rich winey gravies with lots of root veggies. Full marks to Aldi for their Super 6 this week being fantastic for said casserole.

The weaning is... shall we say interesting? Some days the baby rice stays down and seems to have the same effect on Harry's milk, on other days it doesn't seem to make a blind bit of difference. I'm keeping on, and just hoping for the best.

Breakfasts - we're back on porridge, with chopped up banana

Lunches - I'm randomly trying to use up some halloumi that's languishing in the fridge so - griddled halloumi and houmous in pitta bread with carrot and cucumber sticks

Dinners -

Monday: Leftover beef casserole with mashed potatoes and broccoli

Tuesday: Courgetti spaghetti

Wednesday: Chilli con carne (freezer) with rice

Thursday: Chicken casserole with baked potatoes

Friday: Pizza

Saturday: Pesto & pecorino salmon with sweet potato wedges and veggies

Sunday: Slow cooked beef brisket

Meal Planning Monday: Sunny days and sleepy nights



This week's meal plan is late (again - sorry about that) but done nonetheless - we've got M's parents staying with us for 4 days this week so our meal plan is bearing that in mind.

The sunny weather of late has been glorious, but has completely killed my appetite for proper food and I've been getting by with some very unhealthy snacking which keeps me going but isn't great for breastfeeding. So I'm trying desperately to eat properly, so this week's shop has included some bits and bobs I can eat with one hand as well as cordial to make the necessary litres of water a bit more interesting.

Breakfasts: Oatibix (oats are good for supplementing breast milk supply) and a banana

Lunches: either halloumi and houmous in pitta bread with salad, or houmous and avocado in pitta bread with salad. I've had to move away from bowls of salad as I just can't eat salad one handed whilst feeding without getting it down me or on the baby.

Dinners:

Monday: leftover pulled pork in burritos with mushrooms, peppers and avocadao. There wasn't much pork leftover so I needed to bulk it out from the fridge.

Tuesday: Courgetti spaghetti

Wednesday: Leftover Courgetti spaghetti

Thursday: Cottage pie

Friday: Baked pasta and meatballs

Saturday: Chilli con carne in the slow cooker

 I baked a variation on bread pudding yesterday so that's our cake supply for the week sorted - blog post to follow.

Meal Planning Monday: mildly sleep deprived



Perhaps that's an understatement - although *touch wood* I seem to be coping OK with the disrupted nights, it's the cluster feeding that I'm still finding a killer. This weekend's culinary efforts have been a bit of a disaster - I cremated the bacon, scrambled the carbonara, and made bread rolls that were doughy to say the least. Hopefully next week will be better. Hopefully.

It's supposed to be glorious for most of this week - I'm planning to take Harry out in the garden and enjoy the shade of our apple tree. Aside from an NCT meet up and a Health Visitor weigh in for Harry it's a quiet week. Which to be honest, is the best way for us at the moment. Slow days with flexible to do lists that can be abandoned without a problem are indupitably the way forward.

Breakfasts: Yoghurt and granola for me (still with the oats) with extra fruit as well.

Lunches: Halloumi and salad or houmous, pitta bread and salad.

Dinners:

Monday: Chicken wraps with avocado, salad and potato wedges

Tuesday: Courgetti spaghetti

Wednesday: leftover courgetti spaghetti

Thursday: Pizza

Friday: Lasagne

Saturday: Steak

Sunday: Freezer surprise

Baking wise, I did make M a s'more inspired birthday cake which I'll blog later this week so we have that for packed lunches - although it's not particularly travel friendly.

Mucking up Meat free Monday

To be honest I'm not religious about sticking to meat free Monday - but I do try to ensure that we have a few days each week that are veggie - although M is a confirmed carnivore he's always been very open to veggie dishes and never complains (although occaisionally looks longingly at bacon). For me, meat free days are less to do with healthy eating - although that's terrific - and more to do with being thrifty. Like so many people we can't afford to eat meat daily, and even when we do eat meat dishes I bulk them out with veggies or lentils.

One of my go-to veggie dishes is courgetti spaghetti - I make it most often in the summer when courgettes are cheap and plentiful and if veggie friends come over my discovery of Sainsbury's Basics hard cheese as a substitute for parmesan means it is an appropriate option. Courgettes were discounted this week in the supermarket and as I'm trying to eat lots of veggies after a week of bread and ham in France my mind immediately jumped to courgetti spaghetti.

I started off as I usually do:

2 cloves garlic, crushed
1 red chilli, chopped
1/2 teaspoon Gran Luchito smoked chilli paste
3 big courgettes grated
100g parmesan grated

I sweated off the garlic, chilli and chilli paste and quickly stirred in the grated courgettes. So far so good.

And then, I got distracted and somehow chopped up half a chorizo and added that to the pan. Nope, no idea why - I wasn't even really thinking about what I was doing. So then I thought to hell with it and added about 10 cherry tomatoes (I didn't count them, just used everything we had).

At which point I looked into the pan and realised that I had, irrevocably screwed up Meat Free Monday. There was now no point in going on as usual so I decided to abandon my original plan, and cook everything down really slowly to make less of a fresh and light dish, and more of a soothing and hearty one.

After 15 minutes over a low heat, the courgettes had really started to cook down with the tomatoes and the paprika scent from the chorizo was lovely. At this point I added the parmesan, stirring the pan until it had melted. At this point I made the executive decision to omit the lemon and pine nuts as I didn't feel like either of these would add anything to the finished dish.

As always this was stirred into wholewheat pasta, eaten from bowls on our knees as the lounge still *still* wasn't (note the tense) finished yet.

Meal Planning Monday: with love from the new Mrs R



After all those months of panicking, writing lists, budgetting for all we're worth we finally did it. At 3pm on the 22nd March M and I said "I do" and started the next step of our lives together. We had a lovely honeymoon in Carcassonne last week, and this week have returned to the daily grind of working, volunteering, cleaning, shopping, ironing (How much ironing?!) and, of course, blogging. It's not that much of a grind really - we're doing it together, and just occaisionally we remind each other that "we're married!"

I will blog a bit more about our day - but for now it's back to the usual (late) Meal plan for the week.

This week, we're both at home, and as busy as ever. I say that but it's my last night at Guides tomorrow before I step back as leader - I'll always be on hand as an extra pair of hands, but my time in charge is over and I'm thrilled to be handing over to someone as lovely and as capable as Hayley.

Breakfasts: I need to make some more yoghurt tonight to get back onto that wagon, but have been keeping going courtesy of bagels and peanut butter with a banana chopped up on top.

Lunches: Today I had a wonderful salad of feta, tomatoes, cucumber, peppers, radish, and some seeds for crunch. Hopefully the week will herald more of the same although I finished the feta so it'll be my favourite chilli grilled halloumi instead.

Supper:

Monday - I accidentally de-veggied my courgetti spaghetti by adding chorizo to it, and cooking it down much slower with tomatoes.

Tuesday - I'm having pizza with the guides so M is having leftover courgetti and chorizo pasta

Wednesday - Chicken and spinach curry

Thursday - Leftovers

Friday - we found a pizza in the freezer so that will be our quick and easy supper

Saturday & Sunday - I've not quite decided yet, but as next week's a busy one, something to set us both up for the week ahead.

Meal planning Monday

I have to say this week I'm writing this bathed in glorious sunshine, wearing pjs and drinking buckets of tea - this seems to make the whole process a bit more hopeful. We're on the final countdown to the wedding and although the logical part of my brain tells me we're really organised, the hormonal part tells me I should be in full blown panic mode.

A busyish week for us, although no Guides for me this week as I'm travelling back from a meeting on the South coast so don't think I'm going to make it in time. We're starting off with a roast today, although sadly it's not going to provide leftovers as the piece of beef I roasted yesterday is about a third of the size of normal. Just enough in fact to do 4 meals.

Breakfasts: I'm still firmly on the granola and knitted home made yoghurt bandwagon.

Lunches: Still no enthusiasm - so soup or a sarnie it is.

Dinners:

Sunday - leftover brisket with roast potatoes, cauliflower cheese, veggies, yorkshire puds and gravy. Yum. 

Monday - I'm meeting one of my very best friends for an overdue catch up and squee over the upcoming nuptials. Food will be involved.

Tuesday - I've got some courgettes knocking around in the freezer so courgetti spaghetti is on the cards

Wednesday - Cottage pie with peas

Thursday - Leftover cottage pie

Friday - Homemade chicken kebabs - I use a variation on this recipe

Next weekend I think I'll do a roast chicken as I'm off in the run up to the wedding so it'll make for a nice straightforward week.

Meal planning Monday: The sun'll come out...

*fingers crossed*

Normal service has been resumed in the Pantry, and I write this with a fruit cake baking and a shoulder of pork slow roasting in the oven.

I got home late on Thursday and after a pizza and a much needed hug, slept all the way through until the morning. I swear there were angels singing. This weekend has deliberately been slow, with a spot of running, some shopping and a trip to Shaw corner. M and I realised that the only sensible Christmas present for us is National trust membership and are ignoring the fact that this makes us old.

Next week M is working fairly long hours and I'm trying to fit in 5 runs alongside Brownies and Guides. However, that kind of busy week is eminently manageable - which is odd when last week all I had to do was work and run and that wasn't manageable.

Breakfasts - Total greek yoghurt was on special this week, so I have a daily tub of that, plus strawberries/ blueberries or stewed rhubarb and grape nuts.

Lunches - salad and smoked mackerel for me.

Dinners -

Monday: Leftover slow roast pork with salad and baked sweet potatoes

Tuesday: Leftover slow roast pork in tortilla wraps, with guacamole, yoghurt and salad (rice for M)

Wednesday: Courgetti spaghetti

Thursday: M's night - sweet chilli chicken I think

Friday: Sausages, baked potatoes and salad

I'm baking a Nigella fruit cake with chopped up marzipan - so that'll be our cake quotient this week.

Meal planning Monday - ships that pass in the night



Well it's that time again *blithely ignores the lack of planning the last few weeks* Ahem. This week is at best annoying and at worst upsetting. As M proceeds home tomorrow, I head off for my week working away. Which I love - I get to be on the South coast and the weather forecast is good. But I haven't seen M for a week now. Still, there's no use complaining, such is life. 

I think I've mentioned previously that M isn't a fan of cooking. Food is fuel to him so I've tried to leave him food for the week that's quick and easy for when he gets distracted by leads, or the cricket, or the rugby. 

Breakfasts - as I'm away, it'll be poached or scrambled eggs on wholewheat toast

Lunches - a bit of an ongoing battle to remind myself to make time to eat when I'm training. There is a sandwich shop near where I train so I will do my utmost to make myself. 

Snacks - normal fruit and lots of water

Baking - I meant to bake a fruit cake today, but have barely stopped so we are cakeless this week. Sad times. 

Dinners: 

Monday: I normally pick up a salad in M&S for supper on my first night away. M will be nomming en route

Tuesday: Something salady for me. There's courgetti spaghetti in the freezer for M

Wednesday: Freezer surprise for M and maybe I'll push the boat out and go to Pizza Express

Thursday: We'll be home together :-) Something quick and easy as I'm at Brownies first of all

Friday: Chicken enchiladas with salad

Saturday: Leftovers

Sunday: Roast chicken, with either new potatoes and salad - or the works depending on the weather. Either way, plenty of leftovers for the week after.

Meal Planning Monday: trying to empty the freezer



I'm  a bit late to my spring cleaning this year for a multitude of reasons - however, I'm doing it now. Of course defrosting the freezer is on there, and we're trying to eat it down to make that easier and also to get rid of some of the things that I think have been in there since we moved. 

Breakfasts: You can tell it's warmer as I'm on fruit, yoghurt and grape nuts

Lunches: Salad - last week with smoked mackerel, this week with tuna mixed up with fat free fromage frais. 

Baking: I made some squishy oatmeal and tea soaked cinammon raisin cookies on Friday, but startlingly, there seem to be none left. At the moment this means we're bake-less but I'm sure I'll rectify that presently.

Suppers

Monday: Baked, barbecue chicken wings with salad and sweet potatoes

Tuesday: M is in charge... 

Wednesday: Courgetti spaghetti

Thursday: Leftovers

Friday: M's away so fish for me. Probably en papillote if I'm being fancy, but in reality steamed in parchment with lemon and rosemary. With salad I suspect.

Saturday: I'm at Brownie revels all day so takeaway curry

Sunday: Leftover curry

Meal Planning Monday: The edition for M's eyes only


Not in a filthy way you understand, but I'm not here for most of the week - banished to the South Coast leaving M to entertain himself and start a new job. It's rubbish when dates like that don't match up, but what can you do.

This weekend was intended to be another quiet one, but a hugely successful archery event at M's club, a visit to the Proms tonight, moving furniture for Mum, and lots of pottering in the kitchen have meant that this last of the summer bank holiday weekends has flown past. I'm hoping that it doesn't usher autumn in too quickly as I've just started enjoying the sunshine.

I'm installed on the sofa at present enjoying Sense & Sensibility before we head off into town, and despite not being the person installed at the cooker this week I didn't want to not submit my meal plan.

Breakfasts: Yoghurt & fruit for me. Buckets of tea and coffee as always.

Lunches: M will be having - sandwiches, crisps, cereal bars, dried fruit, cheese, banana and coke. I'm training so salad and fruit for me.

Dinners:

Monday: Tonight we're out and I'm supposed to be finding somewhere for us to have tea, not watching what the Dashwood sisters get up to next. Oops.

Tuesday: Sweet and sour chicken with rice. I made this last week to a recipe another Guider taught me as it's a quick camp cook. Leftovers went in the freezer.

Wednesday: Courgetti spaghetti - frozen leftovers again.

Thursday: The last portion of sweet and sour chicken with rice

Friday: I'm hoping not to be back too late from Poole, as we're going to fit in a food shop - so whatever we see there. Something quick and easy I hope.

 
Saturday: This is where inspiration abandons me. I'm not sure what we have planned - if it's just a pottery day or a 'here's our list of all the many, many things to do' day.

Sunday: A roast dinner I think - either beef, chicken or pork - I shall see what's in stock at the butchers
